Protein Cinnamon Applesauce Bread

This recipe has rave reviews from local runners. We love eating this bread in muffin-form after Saturday morning runs. Taste testers loved how moist and flavourful this bread was, and we speculate that it would be delicious as toast (with coffee?!). It is delicious with any vanilla protein powder, for this recipe we suggest trying Tailwind's Vanilla Recovery Drink. Or try it with a chocolate protein powder for a more decadent treat!


Cinnamon Appleasauce Bread

Makes one large loaf, about 12 servings

Ingredients

  • 1 1/2 cup white whole wheat flour
  • 1 1/2 tsp baking soda
  • 1/2 cup recovery drink mix
  • 1/2 tsp cinnamon
  • 1 1/2 cups unsweetened applesauce
  • 1 tsp vanilla
  • 1/2 cup brown sugar
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 2 small apples, chopped (optional)
  • 1/2 cup walnuts, roughly chopped (optional)

Preparation

Step 1: Preheat the oven to 350F. Lightly flour a medium sized loaf pan.

Step 2: In a medium bowl, mix together the dry ingredients: flour, baking soda, recovery mix, cinnamon, and brown sugar.

Step 3: In a separate bowl, mix the rest of the ingredients: applesauce, vanilla, coconut oil, maple syrup, water, apples and walnuts if using.

Step 4: Combine the wet and dry ingredients, mixing gently until just combined. Do not overmix – a few small lumps are ok. Pour into the prepared pan.

Step 5: Bake for about 45 minutes or until a toothpick inserted comes out clean.

Step 6: Let the loaf cool for about 10 minutes, then turn it out onto a cutting board and dig in!
